Clearspring Organic Japanese Umeboshi Plums, also known as salted Japanese pickled plums, are a traditional Japanese delicacy enjoyed widely across the country and celebrated for its very unique tangy flavour. Our Organic Umeboshi Plums are a taste revelation, delivering a concentrated burst of flavours, combining bitter, salty and sour with just a hint of fruitiness.
How is it made?
Clearspring Organic Japanese Umeboshi Plums are grown in Wakayama, the best-known ume fruit growing area in Japan, by a fourth-generation artisanal family grower and producer on a mountain farm. Once harvested, our Ume Plums are sprinkled with unrefined sea salt and left to store for up to a week until they are entirely pickled. Once perfect, the plums are laid out to dry in the sun for three days and are regularly checked and turned by hand to ensure they are thoroughly dried.
After the drying process, the plums are matured in barrels for several months, which is one of the secrets to the incredible taste and quality of our Organic Umeboshi. Once perfectly aged, a mix of shiso leaves and stems is added to the plums, massaged with salt, and seasoned with some ume plum brine. The shiso gives our Umeboshi an additional flourish of flavour and its beautiful pinkish-red colour.
The strong flavour of our Organic Umeboshi Plums means you can use them sparingly. Just a small piece can add zest to sushi and rice balls and can be rubbed onto cooked sweetcorn or used in other dishes. Taken alone, umeboshi has traditionally been considered a digestive tonic.
